for burning caravans?

our local gastro pub has a log fired steak oven thingy, its not huge looks similar to the other stainless steel boxes in the kitchen, but it does cook a fine steak, doesnt seem to dry them at all even if people chose well done etc At work

A big no no for that.

Read this - see the bit about Beef well done. http://www.dailymail.co.uk/femail/food/art...-dish.html

"This is a well-known pet hate of chefs around the world, as cooking steak for too long eradicates the flavour and can make the pricey ingredient chewy and bland.
But Bourdain has shared another reason why we should never order steak 'well-done'.
He said: '"Saving for well-done" is a time-honoured tradition dating back to cuisine's earliest days.
'What happens when the chef finds a tough, slightly skanky end-cut of sirloin that's been pushed repeatedly to the back of the pile? He can throw it out, but that's a total loss...
'Or he can "save for well-done": serve it to some rube who prefers his meat or fish incinerated into a flavourless, leathery hunk of carbon.'" Past: FL2 TD4 HSE Auto

Just oozing blood will do for me. I like the meat tender, and when its over cooked steak looses that tenderness. Updated- Waiting for a Scotland v England 6 Nations home win. 24th Feb 2018

I've got a friend who likes his done medium rare. His wife likes hers cremated. This year on holiday with three other couples we all decided on a Chateaubriand per couple. She had to have hers cremated and the waiter asked her again as he thought he'd misheard when she asked for it 'well done'. I think out of disgust, the chef served them up one of his old boots. Laughing What a waste of a good steak. My mates face was a picture as he tried to chomp his way through it. I think next time he'll pass on the Chateaubriand! Past: FL2 TD4 HSE Auto

Never mind the chickens - what about a delicious accompaniment of foie gras?

Two wonderful fillet steaks in the fridge for tonight - just need a goose now!

I once went to a foie gras farm, in what looked like a run down old french barn was a very modern kitchen and canning plant.

the geese actual queued up to be force fed with the electric funnel

a controversial method but produces some good results

I once ran a share club with some mates ' foie gras investments' so called because we were all on the same french holiday sampling the produce .

A controversial method but produced some poor results. two of the members have never spoken since Rolling Eyes our wives did warn us it would end it tears Laughing At work
