Kitchen knife set advice. Any cheffy types on here?

As above. Looking to get a nice set of knives for the kitchen. Sharp ones! Prepared to pay anything up to £500 ish for a good set. Any recommendations? Past: FL2 TD4 HSE Auto

2007 Freelander 2 TD4 HSE Auto Stornoway Grey

To be honest is there any real need to pay that much ? I was given a set of Global knives that cost hundreds they were dreadful,I use knives that cost on average £20 each now and use a diamond sharpener when necessary they get used everyday and I can't fault them.

Well, to be honest I’m looking for something that looks nice too. Global are one brand I’m considering as they do look nice, especially the set with the magnetic wall holder. Couldn’t you have sharpened your Global knives with your diamond sharpener?

Steve D, I taught my wife to buy quality, and not buy on compromise. Buy quality once, buy comprise many time is not a wise option.

I bought a global knife to see what they was like, i found it super sharp, but cutting on a marble chopping board blunted the blade, the edge was brought back by a twin wheel wet sharpener and was good again

Pro's
they look nice, in the block (not wall)
There weighted nice, blade to hilt balance
they cut when sharp and don't rust

Con's
Not dishwasher safe
Can snap if dropped
Need sharpening steel to keep edge
Sharp enough to take the end of your finger off if not concentrating
Handles can be slippery when wet/oily Former Mod/Member, with the most post & Chicken George Arch nemesis

My other half is a professionally trained chef and very keen cook, although she doesn't work as a chef.

We both have a set of the knives recommended for her course, which have lasted well, but are a bit mix and match. A while ago she treated herself to the Flint & Flame 3 piece chef set, which she rates highly. I'm not a fan of the handle but perhaps they are to your taste.

If you're willing to go to a show where they have a stand (eg Taste of London) you can pick them up discounted. I forget by how much but I recall at least 20% or so.

@npinks. Interesting you prefer the block. I fancied the magnetic wall holder but one major bone of contention between me and the wife is that she wants a block holder that can go out of the way in the cupboard. We have a block holder at the moment for our current set and her reasoning is........that if someone breaks in and the knives are there on the wall, the intruder can grab one and use against us. Women and their logic!

Good knives should never be put through a dishwasher, my first ever job was as a butchers boy in a little shop with an old time butcher.

The first thing I was taught was that the most dangerous thing in the shop was a blunt knife, so the last thing I did every evening after cleaning up was to take the knives to the grind stone and put a clean edge on them.

I was told never to cut on marble or glass, as this blunts knives. I always use hardwood or plastic boards depending on what I am cutting.

On the topic of cutting ......... I had to get a pair of kitchen scissors that had a handle molding for BOTH left and right handed people.

Sabatiere are supposedly the best, not stainless but highcarbon steel and high maintenance as they need drying immediately after washing they will show rust in the slightest humidity unless used every day or lightly oiled with olive oil, engine oil is also suitable but not a good flavour even Castrol R. Whistle my PC is slightly to the right of Genghis
