When one brews beer or whisky the yeast gives off CO2. The distilleries don't need it but collect it and sell it on - canny Scots! So how come the brewers can run out of it?

I think the co2 is used more for dispensing than producing real beer. lager however seems to be fizzed up like a sodastream At work
