I have made a full scale plan and I think they have made a error in doors as I can't get them to not extend past the centre point

We fit loads of doors across corners, always have a small infill panel either side, never had them flush, I imagine it would be a pain to keep aligned, you can lose this with the small gap. Fortunately dental cabinets are going minimalist at present, simple straight runs are the order of the day.

Just a little Tip NP, that's ( if you don't already know ,if you do - ignore me 😀) When you line your cabinets up , to get a nice flawless fit clamp them together with a pair of rubber face clamps at the front then screw them together with short screws placed in a position that will be covered by the hinge . you can get joining bolts for that, leaving only a Philips top at each side.

my kitchen is a free standing, take the water pipes and drains of and you can move it all, but its a big room so I didnt have to maximise space
fitted it in a couple of hours, carried it in attached worktops,skirting and pipes. job done.
took it out 2 years later for new floor tiles. popped it back after At work

Funnily enough i have all the tools to fit kitchens, from a fair few years, so have been clamping things

Took a full scale line drawing down to the kitchen suppliers and showed them that the doors don't meet etc

turns out that the company they have used manufacturer the unit, has got a size wrong, making the opening smaller than required

So the heaviest, most awkward unit, that i needed to hire a pallet truck to position it, needs to be removed and replaced to correct the error they have made

Yes you can but a properly fitted kitchen shouldnt have them , it's not custom enough I got that tip from a mate's husband who was a fitter to the rich and famous for " handmade kitchens " that cost a fortune. He had loads of Pro -tips , how to cut the mitres on cornice, so that the angle was never compromised , which cornice glues to use ( aerosol activated mitre glue ) and the use of coloured waxes to fill tiny holes and so forth.
