AH! Another topic I can't find an answer on. There's lots of information on the seat base foam collapsing, but nothing on the seat back foam collapsing.

The entire left side foam of my drivers seat has torn away under the cloth cover, leaving me leaning against a sharp metal frame (I'm quite a small frame and I naturally lean towards the centre of the car, i.e. to the side of the seat). I'm not sure if I can remove the cloth cover to replace the foam or if I'm going to have to find another seat? I assume there's no way to swap drivers/passenger seats due to the airbag.

There's plenty topics outlining removing seat base and cover, try searching heated seat, seats, seat removal etc and have a read. Seat back is also removable. Seat swapping is not an option.
The seat base is a part your can order as well as cover of your choice. MY15

I think you might have misread the problem. I've found PLENTY of information on the seat base, I can't find a thing on the seat back.

As with a replacement seat base foam, your best source is likely to be our sponsor, Duckworth Parts. I know it has to go to Oz, but at least you will be getting a perfect replacement.

So I downloaded the Land Rover instructions off TOPIx for how to muck with the seatback, and the 'cover' is removable! Hurray! I'll just be replacing the foam in the coming weeks, problem solved.
