So my quandary is

I am running a set of Goodyear Ultragrip + SUV winter tyres (barely seen a flake of snow over the past 3 years!!) They are about half worn and one of them has a non repairable puncture.
Goodyear don't make this tyre anymore it has been replaced by the Goodyear ultragrip performance gen-1.

Some stock of the old tyre seems to be just about available but at nearly £200 per tyre!!

The Goodyear technical department say that According to the law in the UK it is permissible to mix tyres across the axle as long as they are of the same construction i.e. radial. but they recommend as a minimum that tyres should be the identical across the axle and that includes a similar tread depth and pattern

So should I
1) Purchase one old style tyre and replace the damaged one??
2) Purchase a pair of new style tyres and replace across the axle??
3) Forget about winter tyres completely, wait for my summer tyres to wear out and replace with cross climate type??

What do you think??

Not 3. Winter and All Season tyres are not comparable. This is probably the clearest test that I've ever seen and is a bit of an eye opener:

Always replace in pairs and do not run different tread depths across the same axle, so option 2 it is

Recently I experienced a bit of a "snaking" on a wet surface with the set of 18" Scorpion Verde, tread on all four are between 4-5 mm. Triggered by seeing the opposite car coming toward me, I steered toward the verge, but it seemed too much then corrected and this "snaking" happened! Scared out of me! Is this normal under the wet road condition?
Tracking has been done when putting this set of tyre and car drive normally.

from you description i would say yes, it is possible

I had similar at a much lower speed with my General Grabber GT, pulled up to a roundabout and car skids, when i release the brake and kept going was like i was driving on ice, the back end slewing left and right, (as i played in it) this was due to a diesel spillage that i later reported Former Mod/Member, with the most post & Chicken George Arch nemesis

This was the second time. The first time was 10 years ago with a Ford Focus on the A1M, the surface was wet too.

I have definitely decided to ditch No 1 and then I have got all summer to decide whether it is to be No 2 or No 3 !!

I would go for option 2, buy 2 new winter tyres and put them on the front.

There is no substitute for winter tyres -you dont need snow and icve, cold and wet roads are much safer to drive. 

I think Nokian Weatherproof (snow flake) SUV tyres make the old distinctions rather academic. If you drive a lot on wet roads (particularly at 7degrees c or less) then the Nokians are outstanding unless you actually need studded tyres - and they are fine to use all year round. I personally would never mix snow flake tyres with other rubber - I think that is just asking for unbalanced grip in extremis. No doubt for somewhere always hot and dry there is a better choice and I don't know how these tyres will last yet but definitely worth considering.

Agree tradewind - I have had a set of the Nokians on for 2 seasons now and we average 5m of snow each winter up in the pyrenees. I would say they have performed just as well as traditional winters and seem to withstand high temps well in the summer . we drive down to the Med most weekends. I would just say they are a bit noisier than a regular tyre because to the tread pattern, but a small compromise to make.
