Any tips, I am looking at a HSE LUX DS with Ivory Windsor seats, normally I only have black leather seats.

Will these need special care over and above the dark seats to prevent staining etc

Any advice appreciated 

Don't wear Jeans when you drive it.
Don't even wear a black leather trouser belt.
Both will irreversibly stain the leather!
Had this on my alpaca leather D3, so for the D4 and FL2 I stuck with plain old durable black leather.
Personally would never have light leather again on a vehicle for those reasons.

 FL2 now gone and have a couple of items left for sale:-

Brodit active iPhone holder + Brodit dash clip,
Bluetooth Music Streaming Module.

Be very careful getting/sitting in your car with wet clothes, transfer of colour can be a problem. Barrier cream is advisable.

It does have one bonus in that you can see the filth thats built up on the seats where as with black goodness knows what youre sitting in.
A quick wipe over with a damp wipe each week is all thats needed to keep it looking clean, its surprising how quickly in does pick up the muck even though your clothes are clean, must be general dust etc and of course any moisture from you body.

Unless you like cleaning regulary or have old man beige trousers then I would avoid Ivory also! It rains up here all the time and wet jeans will just make denim dye transfer worse.
