In my next life I want to be a dog who lives in a pub. You get paid to sit by the fire, don't have to go out chasing sheep or pheasants in the cold etc. People buy you crisps and swoon over you. What could be better?  3 x FL1 2 manual + 1 auto

Considering the are border collies they are fairly calm, my older one was a pain until recently and the pup just wants cuddles when she is not playing with milo (as she was left alone all day with the previous owners)

Mental games tire them out more than physical games as they could both play fetch all day long but a good mental game will have them worn out in no time.

It helps that me and my mrs are both fairly young (28,29) so can take them on nice long walks as well, plus teaching them new tricks and obedience is always fun and tiring.

I have two Welsh Collies and what you say is true. Mental stimulation does tire them very quickly but they still need lots of physical exercise otherwise they can put on weight. The breed is genetically gifted with intelligence and endurance and ours are never happier off the lead blasting around forest trails waiting for the next command. I hardly need to walk, just give the commands or use a whistle, all of which they learnt in the safety of my garden.
My two don't really walk, it's running or nothing; except when they herd each other which, with a lot of patience, is great fun to watch and eventually needs little human intervention.
Pity as you say about been left alone all day. Rescue centres always have Collies, many due to the owners unable to cope. Despite the breed being very hardy outdoors, they are very sensitive and require a lot of firm but sympathetic human companionship. I never so much as raise my voice.
Having said that, due to their intelligence, Collies can be easily trained to perform quite complex tasks, I'm never ceased to be amazed at their power of learning. One of mine is 38 months old and he often in a gentle manner rounds up free range hens when they get loose in the village.
