Me? Bad influence?
Only with those who drink red wine Rolling with laughter
With cubed beef from the butchers, none of this supermarket stuff, it was left for 2 days soaking in a hoppy beer. Red wine also works well too.
There is really no need to brown the meat beforehand. In fact, we've found it's better not to do as any residual oil does show in the final gravy.
We cheat a bit and use Knorr Rich Beef stock pot for liquid then thicken if needed with gravy granules.
Any root veg must go in the bottom of the pot as they take longer too cook.
And, most important, dumplings must be homemade. They take a jiffy, bought Bessie stuff is crap.
I know Nick, you hate dumplings Whistle

This is only half the story. Mrs Pegleg will forward her recipe to you for a large financial fee Rolling with laughter
In North Staffordshire, a beef stew is called 'Lobby'. Because you lob everything into the pot.
But not old socks and dirty underwear Laughing
But we did when you were here, just for the after taste Laughing Another member of the failed FL2 clutch/DMF club, twice.

Same in Liverpool only it is called Lob Scouse and if you cannot afford the meat to go in it, it becomes Blind Scouse.

For unbelievably tender meat consider Sous Vide - not a cheap investment, and some might think it too fancy or too much trouble, but produces the most amazing results. Very good for cheap cuts - flank, short rib etc - but also produces the best pork belly I've ever tasted. Can be used for veg as well, we do beetroot and such like. Also good for keeping fruit whole for crumbles, tarts etc.

Also, if you're into soups then consider a pressure cooker, reduces cooking time considerably and good for lots of other things too.
