Why do LR fit two different types of door handle, and what
is the difference?

I don't really know, I suppose the outside ones would look odd if they were also fitted on the inside, likewise vice versa.

Maybe it's me being stupid, but I'm really not sure what you're asking!

There's a difference between the front passenger door handle and the others, in that the front passenger door handle houses the mechanical emergency lock...

Or are we talking different handles on different models?

I am not to sure myself but I think some external door handles are grey and some are black. Depending on what type you have dictates as to whether you need replacement handles, ie the handles external trim comes off. Or you need stick on skins, ie the skins stick on the outside of your existing handles.

when I have seen door handle covers (outside) advertised for sale
they ask which type of handle is on the car. Is there only one
type then?
