The different modes change settings withing the Engine Management System, Automatic Gearbox (if fitted), Electronic Centre & Rear Differentials/Electronic Centre Coupling, Hill Descent Control and Traction Control.

Don't overlook the adjustments that TR also makes to the brakes (ABS) settings, e.g. in GGS/M&R the momentary wheel lock is allowed to be longer than in the tarmac setting so as to use a small wall of gravel/snow/mud in ffont of the locked tyre slow the car down. GGS and M&R are differnt to make the best use of the surface material characteristics.
